This is a recipe that's been in the family for a couple of decades. The kids love it and, unfortunately for our wastelines, so do the adults!


3 ripe bananas, mashed
1 egg
1 cup sugar
2 cups all-purpose flour
2 tsp baking soda
3 tbsp milk (or low-fat buttermilk)
2 tbsp vanilla extract
1/4 cup canola oil
1/2 cup applesauce

  1. Preheat oven to 300 degrees.
  2. In large mixing bowl, first mix bananas, sugar, egg, oil, and applesauce. Then add flour and baking soda until just blended. Then add milk and vanilla and blend once more. Don't overmix.
  3. Spray or wipe muffin tins with vegetable oil. Fill muffin tins about 3/4 full.
  4. Bake for 25-30 minutes, or until a toothpick comes out cleanly.


We typically use mini muffin tins but regular muffin tins work too. Add a scoop of chocolate chips to the recipe to make these REALLY tasty!
