Hot German Potato Salad

A friend made this for an Octoberfest party a long time ago, and I usually break out this recipe every Fall when I get a craving for it again. I usually make it in really large batches, (sometimes 20lbs of potatoes) when I cook for large groups. It always gets lots of attention!

  • 6 potatoes
  • 6 slices bacon
  • 4 green onions (or 1 white onion) diced
  • 2 Tbsp flour
  • 2 Tbsp sugar
  • 2 tsp salt
  • 1 tsp pepper
  • 3/4 cup water
  • 1/3 cup vinegar

  1. Peel, then boil potatoes until tender. Allow to cool, then dice them.
  2. Fry the bacon, draining and reserving the grease. As the bacon dries, dice it into bits.
  3. Brown the onion in a few tablespoons of bacon grease.
  4. Blend in flour, sugar, salt, pepper.
  5. Slowly add water and vinegar. Bring to a boil, stirring constantly. Boil for 1 minute.
  6. Stir in the potatoes and bacon; cover and heat through.
  7. Serve hot!

When making this for a large group, I did the potatoes and bacon first and stirred them together in a roaster. Then I made the sauce in large batches and poured it over the potatoes & bacon, mixing it well.
