This is a recipe inspired by a dinner at an Italian restaurant one evening. It's a nice, fresh alternative to boring vegetables that's easy and quick to prepare.


2 large handfulls of fresh or frozen whole, uncut green beans
7-8 grape tomatoes, ripe but not soft
1 tbsp olive oil
2 tsp Italian seasoning
3-4 tbsp parmesean or romano cheese, freshly grated


  1. Trim end/stem pieces from green beans as needed.
  2. Dice grape tomatoes to desired size (thin slices are also cool for visual effect if you have a nice Santoku knife). In a medium skillet, cook the tomatoes and green beans with the olive oil over medium-high heat, stirring occasionally, until the green beans soften but still maintain a crisp break.
  3. Sprinkle with Italian seasoning.
  4. Serve warm, topped with the grated cheese.
