Cole Slaw, Greek Style submitted by Jean Tower

This is a favorite cole slaw at my house, delicious served with grilled kebobs.
Ingredients
half a head of cabbage, finely shredded
one small red pepper, slided in thin strips
1/3 cup red wine vinegar
2 Tblsp olive oil
1 Tblsp mustard (style with the whole seeds)
1 Tblsp honey
1 tsp dried oregano
salt and pepper to taste (It needs more salt than you would think)
1/2 cup feta cheese

Directions
To make the dressing:
Combine vinegar, oil, mustard, honey, oregano, salt and pepper.
To assemble the cole slaw:
Mix the cabbage and red pepper. Add dressing and toss.
Break up the feta and add, mix gently.
Note: This is better if you make it a couple of hours before serving.
